I recently bought a lavender plant to go in my kitchen and I’ve been excited to try recipes where I can use it! In my search for something simple and sweet, I stumbled upon this recipe for Lavender Sugar Cookies. They are very light, not too sweet, and they make the perfect tea cookie. The original recipe called for 1 teaspoon of lavender buds but I ended up using 1 Tablespoon. Still, I could only taste a hint of lavender. Maybe you could try more and see how they turn out.:)
3/4 cup softened butter
2 cups sugar
2 teaspoons pure vanilla extract
3 1/2 cups unbleached all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 Tablespoon chopped dried lavender buds
1/2 cup buttermilk
1/2 teaspoon baking soda
Cream together sugar and butter in a large bowl. Add eggs and vanilla into the creamed mixture. Mix flour, baking powder, salt and lavender together. Stir baking soda into buttermilk.Add dry ingredients and the buttermilk into creamed mixture alternately until well incorporated. Cover your bowl of cookie dough and refrigerate 4-5 hours or overnight.
When you’re ready to prepare your cookies, spoon mixture out, form into small balls and press down with fingers onto a greased cookie sheet. Top with sugar and even more lavender buds. Bake on greased cookie sheet for 10 minutes or until light golden. Keep in mind these cookies stay very light in color.
(You can keep these in the fridge for 4-5 days or freeze them if you wish to not make so many at once!)
