Asparagus has to be one of the most delicious and beautiful side dishes when it comes to vegetables. This recipe is my go-to when I need a quick side and it’s incredibly simple and versatile! If you don’t have goat cheese and lemon thyme, it is also wonderful with parmesan and most any herb (rosemary!). Hope you enjoy this as much as we do.:)
Ingredients
1 lb. asparagus
2 Tbsp. olive oil
a few sprigs fresh lemon thyme
crumbled goat cheese
koser salt and fresh ground black pepper
Directions
Pre-heat oven to 400 degrees. Wash asparagus and break off the tough, woody ends and discard. Place on a rimmed baking sheet and drizzle with olive oil, rolling back and forth so that all of the asparagus is covered in oil. Sprinkle with lemon-thyme leaves, salt and pepper and crumbled goat cheese. Place in oven and bake for 10-12 minutes, depending on the thickness of asparagus, until tender and lightly browned.
Yields 4-6 servings
