I’ve been meaning to try these out for a while now since I saw them here, and tonight was the night that I finally did it. Two words: puuure heaven. Because of my intense hatred (sorry is that too harsh?) for corn-syrup I substituted it with a mixture of pure maple syrup and agave nectar. It seemed to work out great for me, but if you know of any other good replacements for corn-syrup in recipes, I’d love to hear them.:) Hope you are enjoying this lovely fall. This weekend is supposed to be chilly so I’m crossing my fingers that we’ll be able to crank up the fire place! Have a happy weekend!

As November draws nearer, I’ve been keeping my eye out for tasty Thanksgiving side dish ideas. So, I picked up a butternut squash at a produce stand up the street, and went in search of a recipe. This was the first one I tried out and it was absolutely amazing (I really feel that the pictures don’t reflect how incredibly yummy it was). I’ll definitely be making this many more times before thanksgiving! It’s simple and uses very few ingredients, so you have no excuses not to give this recipe a try. I promise you won’t regret it.:)

The past week has been wonderful. Besides having an amazing weekend with friends camping in the mountains, I made some delicious pumpkin chocolate chunk muffins and a veggie sandwich with a garlic and thyme goat cheese spread. Let me tell you….they were both so so good….and I even took some pretty pictures to show you all, BUT… for whatever reason I removed the memory card from my camera and stuck it in my purse and it came in contact with the magnet attached to my wallet. POOF. All pictures are gone! I’m very sad that I won’t be able to share these recipes with you sooner, but I’ll be making them again! In anycase…this may have something to do with my recent lack of posts. :/ sorry!
In my free time I’ve been helping my parents repaint their house, so my kitchen time has been a little lacking lately. But today on our lunch break we threw this together. One dish wonder!

I am a huge fan of bubble tea, but unfortunately the closest tea bar is nearly an hour drive from my home, so I don’t get to go as often as I’d like. So while perusing through my local mini-grocery store I was thrilled when I spotted a bag of tapioca pearls. Why didn’t I think of making my own bubble tea before now?? Chai always reminds me of the fall, so I thought this might be a nice flavor to warm up this cold drink.:) I made up a small batch with my sisters Natalie and Lauren and we were all in love with the tea! We added a splash of coconut milk for a creamy rich flavor, but I think this would also be lovely with vanilla soy milk!

One of my favorite meals growing up was breakfast for dinner. I visited my fam last week, and we decided it had been too long since we’d celebrated this tradition.
I love this dish because it’s so quick and easy to whip together! We usually just toss in whatever we can find in the fridge, and it always comes out delicious. It’s the perfect dish to go along with some biscuits, sausage/bacon and fresh fruit for breakfast, brunch, or my personal fave…..dinner!
