Lemon Thyme Risotto with Asparagus

I hope all of you had a great Thanksgiving and were able to enjoy family time and eating way too much food. I sure did! I was excited to receive sweet comments and messages about your success with my Thanksgiving Dish Ideas. I’m so glad you enjoyed them! At this time you are probably expecting me to be pulling out the Christmasy recipes. They will come soon, but today I’m sharing a lemony risotto that I made for dinner a few nights ago, and I thought it was way too good not to share. It’s deliciously creamy with the perfect amount of lemon and thyme, and I think the asparagus and grilled chicken went along wonderfully with it. This is definitely my favorite risotto to date. It’s pretty simple, and all finished within about 45 minutes. Grab a glass of white wine and enjoy!
