Sarah Hope’s Black Bean Hummus

Sarah Hope has been a dear friend of mine for the past 4 years, and in addition to being a lovely person, she’s one of the best cook/bakers I know.  She lives in Charleston now with her sweet husband (and their soon-to-be-arriving baby girl!) and we only get to see each other a few times a year, but whenever we do we always enjoy trying out different foods and recipes together. When I was visiting her last summer, I tried her black bean hummus…amaaazing. I was caught completely off guard when she told me that her secret ingredient was soymilk. Really? Soymilk? Sounds strange…but I was surprised in what a difference it made. She has a sweet food/life blog, where she recently posted her famous recipe…so now that the secret is officially out, I’m so excited to share it!

Creamy Cauliflower Soup with Parmesan Crisps

My charger has finally arrived! I’ve been so happy to finally be able to photograph some of my meals again to show you. Here’s one I made a few months ago, I was so pleased with the flavor that I decided to make it again. I thought the soup could use a little more of the garlic and onion flavor, so I doubled the content that was in the original recipe. I also added half & half to make it a bit more creamy. It’s a mild soup with a lovely flavor. Perfect to serve alongside some garlic toast and a nice salad.

P.S. Sorry that I don’t have any pink cupcakes or heart shaped cookies to share with you on this lovely day. My valentine is off firefighting for the holiday, so I’m putting off celebrating till he returns.:) hopefully you are all enjoying a sweet time with your special someone and eating enough chocolate for all of us! Butternut Squash with Sage

As November draws nearer, I’ve been keeping my eye out for tasty Thanksgiving side dish ideas. So, I picked up a butternut squash at a produce stand up the street, and went in search of a recipe. This was the first one I tried out and it was absolutely amazing (I really feel that the pictures don’t reflect how incredibly yummy it was). I’ll definitely be making this many more times before thanksgiving! It’s simple and uses very few ingredients, so you have no excuses not to give this recipe a try. I promise you won’t regret it.:)

Hot Skillet Potatoes

The past week has been wonderful. Besides having an amazing weekend with friends camping in the mountains, I made some delicious pumpkin chocolate chunk muffins and a veggie sandwich with a garlic and thyme goat cheese spread. Let me tell you….they were both so so good….and I even took some pretty pictures to show you all, BUT… for whatever reason I removed the memory card from my camera and stuck it in my purse and it came in contact with the magnet attached to my wallet. POOF. All pictures are gone! I’m very sad that I won’t be able to share these recipes with you sooner, but I’ll be making them again! In anycase…this may have something to do with my recent lack of posts. :/ sorry!

In my free time I’ve been helping my parents repaint their house, so my kitchen time has been a little lacking lately. But today on our lunch break we threw this together. One dish wonder!

Spinach & Tomato Crustless Quiche with Smoked Cheddar

One of my favorite meals growing up was breakfast for dinner. I visited my fam last week, and we decided it had been too long since we’d celebrated this tradition.

I love this dish because it’s so quick and easy to whip together! We usually just toss in whatever we can find in the fridge, and it always comes out delicious. It’s the perfect dish to go along with some biscuits, sausage/bacon and fresh fruit for breakfast, brunch, or my personal fave…..dinner!
