Asparagus has to be one of the most delicious and beautiful side dishes when it comes to vegetables. This recipe is my go-to when I need a quick side and it’s incredibly simple and versatile! If you don’t have goat cheese and lemon thyme, it is also wonderful with parmesan and most any herb (rosemary!). Hope you enjoy this as much as we do.:)

I love the magazine Real Simple, and my sweet husband bought me a subscription last year. I’ve kept all of the magazines I’ve received, so I decided to flip through them for cooking inspiration. I found this recipe in the May ’09 issue and thought it looked like a tasty option, plus, Clif looooves salmon. It’s SUPER easy, takes about 25 minutes start to finish and all of the ingredients are things that most people keep on hand. Overall, it was a winner in our book!
Fresh Pea and Mint Pesto

Closet Cooking is a blog that I frequent and I have enjoyed trying out a few of Kevin’s delicious recipes! A couple months ago, my sister Lauren pointed out this delightfully fresh and tasty pesto. I must apologize for not sharing it with you sooner this summer, because I think this is best when made with fresh peas, but frozen peas also work just fine once they are thawed if that’s all you can get your hands on. I thought about waiting till next spring to share, but I just couldn’t keep this recipe to myself until then!:) As soon as Clif and I tasted this pesto we fell in love with the flavor. I tossed it with some pasta and threw some grilled chicken on top and it made for a great dinner, but as Kevin showed in his blog, is also delicious on a crostini for an appetizer or side dish!
30 Minute Whole-Wheat Carbonara

I really need to go grocery shopping. I looked into my fridge today trying to figure out what I could make with the slim-pickings that I had left….among some random items scattered around my empty refrigerator, I spotted some pancetta leftover from making lasagna with Lauren, half a block of parmesan cheese, 1 egg and about a cup’s worth of milk left in the bottom of the carton. I remembered seeing this recipe and thinking it looked pretty easy, so I went for it. Both Clif and I were pleased with the results and with how simple it was! I added some frozen peas in when I was boiling the pasta and I like how it added a nice spash of color to the dish.
