As November draws nearer, I’ve been keeping my eye out for tasty Thanksgiving side dish ideas. So, I picked up a butternut squash at a produce stand up the street, and went in search of a recipe. This was the first one I tried out and it was absolutely amazing (I really feel that the pictures don’t reflect how incredibly yummy it was). I’ll definitely be making this many more times before thanksgiving! It’s simple and uses very few ingredients, so you have no excuses not to give this recipe a try. I promise you won’t regret it.:)

Well, it’s finally started cooling off around here and I’m so very excited to feel some fall weather. Yesterday I put on a sweater, turned on some Nick Drake and decided to bake something. It was a little rainy outside so I thought something to go with soup would be nice, so I went for this. The sweet potato brings a beautiful fall flavor (and color!) into the dish and I just loved it.
It’s my birthday this weekend and to get even more into the fall spirit, I’m headed to the mountains for apple picking with some wonderful friends. So, I’m in the market for some deeelicious recipes using apples! If you have any that you just love, comment and let me know! Until then….happy FALL!:)
Roasted Asparagus with Goat Cheese and Lemon Thyme

Asparagus has to be one of the most delicious and beautiful side dishes when it comes to vegetables. This recipe is my go-to when I need a quick side and it’s incredibly simple and versatile! If you don’t have goat cheese and lemon thyme, it is also wonderful with parmesan and most any herb (rosemary!). Hope you enjoy this as much as we do.:)
Fresh Pea and Mint Pesto

Closet Cooking is a blog that I frequent and I have enjoyed trying out a few of Kevin’s delicious recipes! A couple months ago, my sister Lauren pointed out this delightfully fresh and tasty pesto. I must apologize for not sharing it with you sooner this summer, because I think this is best when made with fresh peas, but frozen peas also work just fine once they are thawed if that’s all you can get your hands on. I thought about waiting till next spring to share, but I just couldn’t keep this recipe to myself until then!:) As soon as Clif and I tasted this pesto we fell in love with the flavor. I tossed it with some pasta and threw some grilled chicken on top and it made for a great dinner, but as Kevin showed in his blog, is also delicious on a crostini for an appetizer or side dish!
Lime and Black Pepper Oven Fries

Natalie sent this recipe to me a while ago after stumbling upon it on 101 Cookbooks along with a message saying “ohhhh, we must make these soon!” So 3 months later we finally got around to make them, and as soon as we tasted one from the oven we wished we hadn’t waited so long to make them! These little guys have made it to the top of my list of favorite potato dishes (and I looove potatoes). The fresh squeezed lime juice and zest adds a fresh and tangy kick and the black pepper adds a little spice. Be forewarned that you won’t want to stop eating these…so be sure to make plenty!
