My charger has finally arrived! I’ve been so happy to finally be able to photograph some of my meals again to show you. Here’s one I made a few months ago, I was so pleased with the flavor that I decided to make it again. I thought the soup could use a little more of the garlic and onion flavor, so I doubled the content that was in the original recipe. I also added half & half to make it a bit more creamy. It’s a mild soup with a lovely flavor. Perfect to serve alongside some garlic toast and a nice salad.
P.S. Sorry that I don’t have any pink cupcakes or heart shaped cookies to share with you on this lovely day. My valentine is off firefighting for the holiday, so I’m putting off celebrating till he returns.:) hopefully you are all enjoying a sweet time with your special someone and eating enough chocolate for all of us! Happy Valentines!

There’s nothing like a hearty vegetable stew to comfort us during this chilly season…and I think this one hits the spot. I didn’t worry about peeling my carrots or potatoes, just gave them a good scrub clean and roughly chopped them up. I think this gave my stew a more rustic feel. But…If you are like my sister Lauren and anything resembling a peel gives you the heebie-jeebies, feel free to peel ‘em.
For the past 2 Christmases since Clif and I have been married we’ve stuck around in South Carolina due to Clif’s work schedule, but this year we’ll be heading up North! We’ll stick around here for Christmas-Eve festivities with my fam and then drive up late that night to be in Maryland for Christmas morn. So very excited about seeing how this side of the celebrates, and maybe even having snow for Christmas! Woohooo!

I hope all of you had a great Thanksgiving and were able to enjoy family time and eating way too much food. I sure did! I was excited to receive sweet comments and messages about your success with my Thanksgiving Dish Ideas. I’m so glad you enjoyed them! At this time you are probably expecting me to be pulling out the Christmasy recipes. They will come soon, but today I’m sharing a lemony risotto that I made for dinner a few nights ago, and I thought it was way too good not to share. It’s deliciously creamy with the perfect amount of lemon and thyme, and I think the asparagus and grilled chicken went along wonderfully with it. This is definitely my favorite risotto to date. It’s pretty simple, and all finished within about 45 minutes. Grab a glass of white wine and enjoy!

I spotted these gorgeous purple carrots at Whole Foods last week and was so excited to make something with them! I love that this dish was able to showcase their beautiful color alongside the orange carrots (tossed with some cute tiny yukons for good measure). They came out very tender and sweet. Absolutely divine. I may or may not have made these 3 times this week. Maybe it was a mind game…but I’m almost convinced the purple carrots tasted better.
These are definitely going on my list alongside Butternut Squash with Sage for great Thanksgiving side dish ideas!

So, as I mentioned in a previous post, I made some awesome pumpkin muffins and took beeeautiful pictures only for them to be accidentally erased a day later. I’ve finally gotten around to re-making these bad boys and I am backĀ to share the delicious recipe! When my family owned a coffeehouse & bakery these are some of the muffins that we would feature for the fall, and they were always HUGE sellers! We would make them with olive oil, evaporated cane juice and soft white flour, and though I highly recommend using healthy ingredients like these, you can easily substitute them with regular oil, sugar and all-purpose or whole wheat pastry flour.
